Slow Cooking Thursday ~ 16 Bean Soup

16 Bean Soup ~ Slow Cooker Style
Source: adapted from Robin’s recipe.
INGREDIENTS:
- 1 package 15 or 16 Bean Soup (ours comes with a seasoning pack and we add that too)
- 3 bay leaves
- 2 tablespoon Mrs Dash
- 1 teaspoon chili seasoning
- 2 cans chicken stock
- Additional water needed to cover 2 inches
- 3 stalks celery chopped
- 3 carrots diced
- 1 large onion chopped
- 3 cloves garlic diced
- 1 smoked turkey leg or 2 ham hocks
- 2 cans diced tomatoes (do not drain)
PREPARATION:
Place all ingredients in a slow cooker. Make sure that water is about double the volume over the beans and soup ingredients. (for example: if you have 2 inches of ingredients then make sure water covers all the ingredients and is at least 2 inches above).
Turn slow cooker onto low and cook for about 12 -14 hours.* Check in 1-2 times to stir beans and make sure that you don’t need to add some more water.
* I usually set this up right before going to bed and let it slow cook on low till dinner the next day. I check it in the am after getting up to see if there is still enough water and to stir the soup as well as mid afternoon too.

I was looking at those bean packages the other day in the store, but didn’t end up getting them. This looks great, I am excited to try it out. I’ll probably do your low-cooking through the night adaptation.
